DETERMINATION OF TITRATABLE ACIDITY |

 |
Titratable acidity also known as 'Total Acidity' is a measure of all hydrogen ions
free in solution, bound to disassociated acids and bound to anions. It differs
from pH which only analyses the free hydrogen ion component. In Australia
titratable acidity is measured to a predetermined end point of 8.2pH and the
total value is expressed as tartaric acid despite results being the sum of all
acids contained within the wine. |

SULPHUR DIOXIDE (SO2) DETERMINATION: ASPIRATION |

Sulphur dioxide (SO2) is the most common preservative used in winemaking
and can be added throughout the process to grape juice, must and/or wine.
Levels of SO2 are affected by numerous catalysts which is why this analysis is
one of the most important. This method is based on aspiration, liberating the
SO2 from the sample for measurement by titration. |

Alcohol levels in wine are a labeling requirement and therefore must be
analysed. Measurement is expressed as percent (%) ethanol by
volume/volume (v/v) at 20°C. One method of determining alcohol content is
ebulliometry which calculates alcohol %v/v @ 20°C by analysis of the boiling

DETERMINATION OF VOLATILE ACIDITY: MARKHAM STILL |
|

Volatile acidity indicates wine spoilage bacteria and in high concentrations dominates the aroma profile of a
wine. The method analyses the level of volatile acid present in the sample by removing volatile acid (mainly
acetic acid) from the fixed acids (e.g. tartaric acid) by steam distillation. The distillate is then analysed and
quantified by titration and expressed as acetic acid. Sensory evaluation is also a very important part of volatile
acidity determination and should be used throughout the wine making process. |

UNSTABLE PROTEIN ASSESSMENT: BENTOTEST |

Protein instability is primarily a problem in white wines, a result of naturally
occurring proteins in the wine being denatured creating haze in the bottle,
generally due to temperature fluctuations during storage. Proteins are treated
prior to bottling with bentonite, however in order to determine addition rates,
fining trials must be carried out.
Bentotest is an acid formulated specifically to change colour in the presence
of protein. It assists in determining the addition rates of bentonite, it is a
simple to use, low cost, fast acting analysis. |

Protein stability can also be analysed by extended heating of wine samples,
simulating the extreme conditions that wine may be exposed to during
storage. In the presence of protein a haze will form in the heated sample.
Protein stability analysis aims to remove all unstable proteins however testing
should always be performed in conjunction with sensory analysis. Often
desirable characteristics (eg aroma and flavour) of the wine are also affected
by bentonite treatment, addition rates should be a compromise between
stabilisation and wine quality. |
